- 1/2 cup honey
- 1/2 cup GF soy sauce
- 4 cloves garlic (finely chopped)
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon chilli flakes
- 1/2 teaspoon of black pepper
- 8 x chicken thigh fillets
- 400 gm sliced baby red potatoes
- 400 gm baby carrots
- 300 gm baby green beans
Method
- Place 4 chicken thighs in the slow cooker (spray with oil first)
- Combine honey, soy sauce, garlic, basil, oregano, chilli flakes and pepper in a jug and mix well
- Pour half of sauce over chicken
- Layer potatoes over chicken
- Layer carrots over potatoes
- Layer remaining 4 thigh fillets over carrots
- Top with remaining sauce
- Place the lid on slow cooker and cook on low for about 8 hours or on high for around 4 hours.
- About 30 minutes before serving, open the slow cooker and add baby beans, re-cover and continue cooking.
